Watch this video to learn how to switch back and forth between colors to make the stripes. The TLDR is that you simply leave the old color where it is and crochet with the new color:
Invisible fasten off and leave a long tail. (You'll use this yarn tail to sew the tail onto the body.) Then attach the tail slightly off center on the back, spanning rounds 15 and 16.
